I have been tossing this around on how to even approach this. It seems like a very simple task, but I want it to look pretty realistic. All the stones are deformed and chipped different and they are stacked on one another. I would like some input as to model and texture such a beast.

Unless you really need to assemble or disassemble it block-by-block, your best bet is to simply use a pyramid primitive and do all the details in texture. You can layer a brick pattern and noise in the displacement channel with subpolygon displacement to get the detail you want.
