Patrick explains the “why” it might happen, around minute 15. Please check this part of the tutorial, as he gives tips to overcome the problem in a given range.
This is an automatic behaviour. If the amount of data in the viewport exceed the power of the hardware, it switches to a lower “mode” to allow for a presentation of the content even animated.
