Texturing corn is either done procedural (as in the file above) or via BodyPaint 3d, perhaps with images. Image-based texturing, how to get those, is explained in my “Photography for 3D Artists” series. See the link in my signature.
To photograph corn, I would use a macro lens, from six sides, and stitch those. The macro-shot might require focus stacking (not part of my series). There are specialized lenses for this kind of shots, e.g., Zhongyi 20mm F/2.0, which gives you a 4/4,5:1 magnification.
In other words, that would fill a full-frame with a single corn. It is quite the adventure to use this lens, and I would think 10 exposures for each focus stack would be required.
