Ease is a term in the animation world which means, to "smooth" the motion around a keyframe. You can define it for both sides (Ease-Ease), or only one side (e.g. "Ease in" and "Ease out"). Depending on the use of these terms, in many apps there can be different definitions for ease in and ease out. You always have the option to tweak these settings by adjusting the tangent of a keyframe. Between the auto tangents and ease-ease you have only one little difference, in the beginning and the end.
